Aside from the commentaries which need to be on the feature disc anyway, I don't think extras need to be in HD.

It sounds like you haven't seen that many HD material yet. At this point, once you get an TV worthy of HD material, seeing anything less than 720p even if it's features is just painful to the eye. If I'm forking out money for HD, then I'll applaud the studios for giving me all the supporting materials in HD as well.
