Personally I would go with this body as it has the right neck and isn't bulky (you could always bulk it out with a little medical strapping tape.
As far as the retailoring goes, turn the jacket inside out, unpick the stitches, cut off the excess material and sew it back up inside out by hand. Doing it inside out means you will retain the nice seam that clothes have (all clothes are sewed inside out).
