Quick question: At checkout I forgot to specify, that I wanted a signature upon delivery. Do I need to cancel the PO then pick it up once again to add the "signature upon delivery" option?

I didn't realize there was such an option. Don't they require a signature for everything over a certain dollar amount?

In any case, you can call and have them change stuff without canceling.
