You are absolutely right! Is in the details where the magic happens... The Rothco MA-1 jacket has that golden zip and a tag made out of pleather. TOPO has been more accurate in that regard, if I remember correctly.

They should never have done that. The cowl an the neck should be one unified piece. Like in the empty cowl they include.
In the movie, when he looks up, he tilts his neck and torso back. Because he hasn't that neck range of motion.
