Based on just a couple scenes I can tell Marty would have been much more serious and stoic, which would have lead to a less humerous movie (even with the same dialogue) and thus the movie would have struggled to find greatness.
eric stoltz is indeed a good actor, but the role of marty mcfly required a lighter touch and a sense of playfulness that stoltz would've had to ACT out. mjf had those qualities naturally, and in abundance. so it would've been too much work and too forced to get the same thing out of stoltz, who is generally more introspective and intense by nature. zemeckis and spielberg made the right choice, zero doubt on that.
but i'd really love to see more of stoltz in whatever scenes they shot. it would make a fantastic case-study in how an actor makes a world of difference. same script, same director, different star can/does change everything...

Stoltz is STILL in many scenes. Lots of the driving scenes and "far away" shots of McFly are actually him.
