Whoa ... yeah I'd bet on nothing more forthcoming.

Having not read the books I don't even know where they're at right now ... do they just go on and on the way real life does, albeit with new issues and different players, or was there some overarching Big Bad to defeat that just hasn't been done yet?
Rabbit sums it up nicely but there was so many more storylines and characters that never made it into the show, the fate of some main characters were completely different in the last book with lots cliffhangers involving Jamie, Brienne, Stannis and of course Jon Snow being stabbed to death, also there was never a "bid bad" per se, there's no Night King in the books and the white walkers haven't had a huge moment, I would say that Euron Greyjoy was being built up as a big bad but the show turned him into a clown so who knows, I suppose it doesn't really matter since the books will never be finished anyway and the only ending this franchise will have is season 8.
 
It has been so long since I read the other books, I would have to start from the beginning if there was ever a final book released.

I also doubt he ever finishes it. He doesn't know how to finish it. The shows ending was so poorly received, he can't end the book in the same way. Plus now with this Jon Snow Spin-off, there hasn't even been proper ending.

That's not entirely true - GRRM did give the showrunners who shall not be named his notes and outlines for season 6, which is why it's the last good season of the show. The last two seasons, 7 & 8, they did wing it. Which wouldn't have necessarily been a bad thing if they didn't rush it. There's still some good stuff in there. It's just overshadowed by so many stupid and unforgivable decisions.
